Dinner for 10


I have been trying my cooking skills here in Boracay. The place I am staying has a "dirty" kitchen. Now I am not sure if this is a Filipino-only thing, but in the Philippines many houses have 2 kitchens. One for show and one to actually use—the hidden kitchen,usually outdoors,is where all the action happens; where things are spilled and chopped and fried. The other one (the show kitchen) remains pristine ,leaving guests to wonder: Where did they cook this?

The kitchen has 2 gas burners , a small table and an impromtu charcoal grill. The utensils are very basic and limited and the knives very dull. I have to constantly figure out a different way to Mcgyver things.The food items (meats and veggies) that are available are also limited . Most of the items that are common to me are not available in Boracay because local folks are unfamiliar or unable to afford such luxuries. Believe me ,brocolli is a luxury here. The resorts and restaurants often buy their food products in Manila.
However, I am able to provide a good 2 course meals, (sometimes 3)for all 10 of us. (Me, the hotel staff and 3 kids) for the same price as one meal for me if I go out. Can you believe it, a whole meal for 10 for under $7. That is what you call a deal.
The staff are really thankful for my effort and allows me to minister to them in a special way. I enjoy the challenge of cooking "outside the box" and at the same time provide love, care, sharing the gospel and friendships to these new friends of mine. Please pray that they will see the awesomeness of GOD through this.
